James and I find ourselves craving this food all the time. I thought I should put the recipes on the blog so that everyone else can enjoy them too.
Spicy Artichoke Dip
1 cup grated parmesan cheese
1 cup mayonnaise
1 can (14 oz.) artichoke hearts, drained and chopped
1 can (4oz.) chopped green chiles, drained
1 clove garlic, minced (I always put more than this!)
1 pkg. (10 oz.) frozen chopped spinach, thawed and drained
Heat oven to 350.
Mix all ingredients, spoon into 9 inch pie plate or quiche dish. Bake 20-25 minutes or until lightly browned. Serve with crackers, pita bread, or baguette toasts.

Spinach Salad
1 big box baby spinach
1/2 head lettuce (optional)
1 lb. bacon (cooked and crumbled)
red onion (ringed)
mushrooms
1/2c.-1c. cottage cheese
1 small brich swiss cheese (grated)
Dressing
1/2 c. sugar
1/2 c. vinegar
1 c. vegetable oil
1 tsp. salt
1/2 tsp. dry mustard
1 tbsp. poppyseeds
2 cloves garlic
Let mushrooms and onions soak in dressing overnight. Toss salad right before eating.

Mary Mary, I made the spinach salad for my friends at work for Valentines Day. We were to bring a healthy heart, red, or heart shaped food, yea the salad has a pound of bacon, it was AWESOME!!! and a hit. We all enjoyed it. Thanks!
